Florida Shrimp Scampi

This versatile butter may be used on other fish, escargot, or even chicken!

SCAMPI BUTTER

1 to 2 cloves garlic, finely chopped

½ tablespoon shallots, chopped

1 lemon, finely ground, including rind and pulp

½ teaspoon freeze dried chives

2 dashes Tabasco

1 dash Worcestershire sauce
¼ teaspoon salt
¼ teaspoon white pepper
1/8 tablespoon garlic salt
1 stick butter (4 ounces), softened

Process all ingredients in blender or food processor, or chop very fine. Add to softened butter. Cover and refrigerate until ready to use.

SHRIMP

6 medium shrimp

½ cup fresh bread crumbs

Sherry

1. Lightly bread damp shrimp and place in baking dish. Melt one-third of the scampi butter and pour over shrimp evenly. Reserve remaining scampi butter for future use.

Bake in hot oven, about 475Á F., for 8 to 10 minutes or until just done. Sprinkle with sherry.

Butter Yield: ¾ cup
