Sauteed Spinach with Sun-dried Tomatoes and Pine Nuts
The texture of the slightly bitter spinach with the chewy, intensely flavored sun-dried tomato and the pungent pine flavor of pine nuts make this side a perfect go along with any cut of beef.
- 1-2 tablespoons extra virgin olive oil
- 1 tablespoon Sun-dried tomatoes
- 1 pound fresh spinach
- 1 tablespoon Chinese pine nuts
Add 2 tablespoons extra virgin olive oil to a heated medium-size skillet.
Add fresh spinach leaves and cook until just limp.
Add in sun-dried tomatoes and pine nuts. Heat a few minutes and sauté until heated.
